Sandy, to. make your own cake flour, you can follow this recipe. For each cup of flour called for, remove two tablespoons of flour after you’ve measured it with the spoon and level method, and replace it with two tablespoons of cornstarch. Enjoy it, it’s one of my favorite cakes!

Michele, the toasted walnuts sound like a great addition! This is my most favorite cake and right now, I’m wishing I had some bananas on hand to make it!
I’m so happy to hear you enjoyed it and thank you so much for taking the time to comment and leave such a great review.

Looked at my ripening banana’s and knew I had to make this. I added toasted walnuts and it was amazing. I will definitely save this recipe and love that is a small cake since there is only two of us.

Great way to make buttermilk with vinegar and milk. I used a gluten free flour blend with no problems. I only used 1 cup powdered sugar in the frosting, definitely doesn’t need 3 cups.

I have not, Diana, and I would only suggest using the pan size recommended in the recipe.

Donna, I’m so happy it was still delicious! And the addition of the walnuts sounds wonderful, too.
Thanks so much for reporting back on the outcome! That’s good to know should anyone else do the same.
